TZATZIKI RECIPE

Ingredients for a big bowl:

  • 1kgr Greek yogurt
  • 3 -4 crushed garlic cloves
  • 2 small cucumbers
  • 1 tea cup chopped or dried dill (if you use dry dill you will put a bit less)
  • 1 coffee cup chopped or dried mint (if you use dry mint you will put a bit less)
  • 2 tbsp. white wine vinegar or lemon juice
  • 1 coffee cup of olive oil.
  • Salt and pepper to taste.

METHOD:

  • Put yogurt in a bowl and mix through well with a spoon.
  • Peel cucumber, cut in half lengthways, de-seed using a teaspoon and then slice it.
  • Put crushed garlic cloves in a small plate and salt it.

Mix in a ball vinegar and olive oil, add the crushed garlic cloves and then add them in the bowl with the yogurt and stir all the ingredients together. Then we add the cucumber and the dill. Taste to see if you will need to add something. Add at the end white pepper.

Put the bowl in the fridge. When you serve it you could add some olives, olive oil and dill on top.

Tips:

The quality of the ingredients make huge difference regarding the taste. Use full fat yogurt, good quality of vinegar and extra virgin olive oil. When you cut the cucumber leave it for about 10 -15 min. to drain, squeeze it with your hands and then add it .
